Here come the holidays begin from appetizers fast, beautiful and economic….
Ingredients:
3 whole eggs
sale e pepe q.b.
3 tablespoons grated parmesan
3 tablespoons milk
zucchini and carrots sautéed
parsley
olive oil extra virgin q.b.
soft cheese for garnish
Preparation:
Let's start preparing the vegetables. Put a little’ oil in a pan and sauté zucchini and a carrot, diced small. Also add the flower of the zucchini cut into pieces and a little’ chopped parsley. Simmer a few minutes. Add salt and pepper and finish cooking, leaving the vegetables still crisp.
Break the eggs into a bowl. Add the salt, pepper, cheese and milk and beat well. Add sautéed vegetables and mix well. Grease the molds for muffins and fill them for 2/3 with eggs and vegetables. Place in preheated oven at 200 degrees for about 15 minutes. Let cool the noodles and garnish with a little’ of cheese and if you like, a few leaves of chopped parsley. Serve preferably cold.
