Puff pastry asparagus is a perfect appetizer to enjoy during an aperitif with friends, but also to be served as a light dish based on fresh seasonal vegetables.

Ingredients

  • 8 asparagus
  • Puff pastry 250gr
  • 8 slices of raw ham
  • Grana Padano flakes to taste.
  • Egg 1
  • Sesame seeds

Explanation

  • Start by cleaning the asparagus, remove the white parts of the stems (1) and scrape them to eliminate the hardest external parts. Collect them in a bunch tied with kitchen string and boil them in salted water for 8/10 minutes, until cooked but still crunchy. Drain the asparagus, let them cool and dry.
  • Roll out the puff pastry roll, flatten it slightly with a rolling pin and cut out with a knife 8 pasta strips (2) approximately wide 3 cm. Lay out the slices of raw ham, sprinkle them with parmesan flakes ,arrange the asparagus and roll the raw ham around it
  • Use the puff pastry strips to wrap the asparagus with raw ham in a spiral. Brush the asparagus sheets with the beaten egg, (5) over the entire surface and place them on a baking tray lined with baking paper and cook for 15 minutes at 200 ° C, until the pastry is cooked and golden brown (6). Serve the asparagus puff pastry with raw ham piping hot!
  • Sprinkle them with sesame seeds once you have brushed them with egg, making them adhere well to the pastry..
